Background
One of Dublin’s leading Asian restaurants is seeking to appoint an experienced and highly qualified Head Chef. You will have responsibility for managing all kitchen operations in this progressive and leading edge restaurant.
Primary Duties
· All Duties and responsibilities to be carried out under the guidance of, and in co-operation with, the company directors and management.
· Accountable for success of the daily kitchen operations.
· Exhibit culinary talents by personally performing tasks while leading a team of qualified staff and managing all food related functions.
· Work to continually improve customer satisfaction within the operating budget.
· Supervise all kitchen areas to ensure a consistant, high quality product is produced.
· Responsible for guiding and developing staff.
· Ensure the highest standards of food provision and cleanliness.
Detailed Responsibilities
· Ensure that all menus are constantly updated, paying special attention to seasonal availability. Plan and develop menus displaying originality and creativity and ensure the continuation of the modern Asian theme.
· Analyse recipes to assign prices to menu items based on food, labour and overhead costs.
· Ensure that all menus are calculated accurately to obtain maximum profitability.
· Ensure that all staff are constantly trained to effect good portion control and pleasing presentation of all dishes.
· Ensure that all areas under your control satisfy the most stringent hygiene requirements and comply with food handling and sanitation standards.
· Order or requisition food and other supplies needed to provide efficient operation. All purchasing to be carried out in cooperation with the MD.
· Ensure that all stocks are ordered to the correct quantities, quality and price.
· Negotiate with all suppliers to ensure that the best deals are availed of.
· Ensure that all stocks are kept securely in appropriate conditions.
· Ensure that staff are fully informed on disciplinary procedures, the handling of grievances, etc.
· Stay up to date with all developments within the profession including training courses where appropriate.
· Ensure that all expenses are within budgeted limits.
· Provide up to date financial data for budgetary purposes.
· Recruit and hire kitchen staff including support chefs.
· Supervise and coordinate activities of chefs and support staff in the preparation of food.
· Collaborate with other personnel to check the quality of raw and cooked food products to ensure that standards are met.
· Manage departmental controllable expenses including food cost, supplies, uniforms and equipment.
· Completion of weekly schedules. Schedule staff as necessary to ensure adequate and consistent levels of service.
· Demonstrate new cooking techniques and equipment to staff
· Ensure holiday schedules are completed and maintained on an annual basis and that all holidays are forecast and balanced to ensure the smooth running of the kitchen.
· The working week will be determined by the requirements of the business.
Sales/ Profitably/ Cost control
· Budgeted food cost achieved while maintaining quality.
· Spoilage reports completed and maintained.
· Proper food comparisons are made when purchasing.
· All food items are secured against staff theft and pilferage.
· Budgeted labour costs achieved.
· Overheads controlled within budget.
· Staff meal costs monitored and controlled.
Requirements
· Highly qualified and motivated professional chef.
· Innovative and progressive in approach
· Experienced in developing creative Asian menus.
· Excellent man manager and communicator.
· Financially numerate and capable of contributing on a business front.
· Able to think ‘outside the box’ both in food provision and business development.
· Hard working, hands-on manager who leads from the front.
· Obsessed with providing the highest standards of customer satisfaction, cleanliness and creative thinking.
· Ability to patiently train and encourage kitchen staff in order to maintain excellence of performance.
