Our client is a 5* Hotel with a Michelin star Restaurant. They offer a unique standard of excellence and quality. The successful candidate will appreciate the level of service and performance required at one of Ireland’s finest boutique hotels.
Essential Skills required:
Social Intelligence – Whether you are delegating work to employees, appeasing difficult customers or representing the restaurant to the public, you will need to be able to communicate well with others to accomplish your goals.
Organizational Skills –Co-ordinating everything so that it runs like a well-oiled machine will take attention to detail and a commitment to organization.
Decision-Making Ability – As the Restaurant Manager you will need to make a lot of decisions—from how to set the tables to whether to make a menu change. You will need to be able to think on your feet and make quick, practical decisions.
Business Sense – You will need to perform the everyday administrative tasks to keep the business running in the midst of all your other duties.
Work Activities:
• Organise daily allocation of staff and respective duties in the Restaurant
• Ensure that forecasted wage costs keep in line with budgeted wage costs for the Restaurant.
• Assist in the recruitment, hire, and oversee the implementation of training for staff in the Restaurant.
• Take control of ordering wines and cellar management. Monitoring sales of wines and involved with monthly stock takes. Wine list updates will also be your responsibility.
• Liaise with the Executive Head Chef regarding menu changes, customer feedback and all other day to day issues affecting the service of the restaurant and hotel.
• Deliver a first class service in line with customer expectations and in accordance with standards set by the Hotel. Resolve customer complaints about food quality or service.
• Direct cleaning of Restaurant Front and Back of House areas to maintain Health and Safety standards, and keep appropriate records.
• Monitor actions of staff and customers to ensure that health and safety standards and liquor regulations are obeyed.
• Arrange for maintenance and repair of equipment and other services.
• Total receipts and balance against sales, deposit receipts, at end of day. Co-ordinate proper accounting procedures with Financial Controller.
• Update and use job-related knowledge.
• Keep abreast of developments amongst competitive set.
• Ensure Restaurant is run at its optimum when you are off duty.
• Ensure communication lines are kept open at all times between all departments in the property – reception/maintenance/housekeeping/accounts/kitchen.
